View Full Version : Help me make a mushroom cream sauce

So my wife found these awesome chanterelle mushrooms at the market, and i'm jonesing for a great mushroom pasta sauce. anyone got any ideas?

Maybe something with cream, vanilla and nutmeg? No actual recipie in mind just thinkin'...

My go-to idea is sweat chopped onions and garlic, together in butter, add mushrooms and saute, deglaze that with some vegetable stock, cook it down a bit, then finish it with cream. Sauces should be simple! A little cognac or sherry or vodka might not be out of the question for the deglaze, as well.

I just use white wine instead of the veg stock, but that's pretty much the SOP.

Oh, and try shallots instead of the onions.
